Maitake, whose scientific name is Pleurotus ostreatus, is commonly known as Maitake, chestnut mushroom, lotus mushroom and cloud mushroom. It is known as the "Prince of edible fungi". It is a dual-purpose fungus for food and medicine. Its meat is tender and crisp, tastes delicious, and has high nutritional and medicinal value.
Maitake has a long history of folk medicine. In 1709, the flower of Maitake was recorded in Yamato's materia medica by Yoshin bayhara of Japan; The medicinal value of Maitake was recorded in the bacterial spectrum of honsaka Haoran in 1834, which is "sweet, flat, non-toxic, and can cure hemorrhoids."
Chinese medicine believes that Maitake has the effect of strengthening the body and strengthening the root. Since the 1980s, a large number of systematic studies on Maitake have been carried out in many countries mainly in Japan. Maitake has unique effects such as anti-tumor, anti hypertension, treatment of liver cirrhosis and improvement of human immunity.

I'm used to stewing pig's feet with soybeans. Today I recommend a different way to eat it: stewing pig's feet with ash tree flower.
Pig's hoof is not unfamiliar to everyone. Pig's hoof is rich in nutrition and collagen, which is conducive to accelerating metabolism and delaying aging. It is a good beauty product. The soft and glutinous pork trotters have a special taste of toughness, which many people like.
It is full of fragrance, fat but not greasy. Who can hold such a big pig's hoof? A mouthful of meat and a mouthful of rice, the taste is really two words - "absolutely"! Today, I'll bring you a detailed method. I can make the fragrant pig's hoof comparable to the hotel at home. Come and make delicious!
Material Science:
2 pig feet, 100g dried Maitake, cooking wine, salt, soy sauce, scallion, ginger, garlic, star anise, fragrant leaves, dried pepper, rock sugar
Cooking method:
1. Soak dried Maitake in warm water for 30 minutes, remove and wash, tear into small pieces.
2. Wash the pig's hooves and remove the hair. Chop the pig's hooves into small pieces with a knife. Wash them and put them into a pot. Blanch them with cold water. Take them out and wash them clean.
3. Heat oil in a pan, add rock sugar and stir fry to get the color.
4. Stir fry the pig's hoof, add sugar color evenly, add onion, ginger, garlic, star anise, cinnamon and dry pepper, stir fry until fragrant.
5. Stir fry the fragrant pig feet into the pressure cooker, add salt, soy sauce seasoning, and then add appropriate amount of boiling water, heat and press for 20 minutes.
6. Add Maitake into the soup and cook for another 10 minutes. After the soup is dried, you can enjoy it.
Be careful:
1. Pig hoof surface of the pig hair must be removed, and then brush clean, this can reduce a large part of the smell.
2. When blanching pig's feet, you can add more cooking wine to remove fishiness.
3. If you think it's too time-consuming, you can use a pressure cooker to make it soft and rotten, and then collect the juice on high fire.
